I'd suggest starting with a goal of three months and then ramping up in three month intervals. Even in an apartment, one can find a way to store food supplies.

Think about other things that you may be able to trade in an emergency, like flats of drinking water, ammo, seeds and even toilet paper.

One thing we've found that I believe will be useful and this would also be easy to store but handy when needed are the water bob envelopes that you place into a tub and fill with water. Cleaner and more useful than just filling a maybe not so clean tub with water and they come with a siphon system as well.
